This is our first offering from Flying Pumas, a project from Colombian producers leading La Palma y El Tucan. We chose this nano-lot after cupping various coffees from Flying Pumas. We were intrigued by its classic and elegant Gesha flavors that are distinctive from this region in Panama.
Flying Pumas
The estate where this coffee is nestled in the Volcán region of Chiriquí. Its mineral-rich soil of the nearby Barú & Colorado volcanoes as well as the unique micro-climate at this elevation, are ideal for cultivating specialty coffee. These factors are crucial for giving these coffees their unique flavor profile.
This farm primarily grows Gesha varietals, but also a diverse range of varietals such as SL-28, Typica, Pacas, and Bourbon, among others. The farm also follows unique agronomic and processing profiles that enhance these coffee’s flavors.
Gesha
This Gesha was harvested at peak ripeness and then anaerobically fermented for 200+ hours in special bags at temperatures between 14 and 28 degrees celsius.
Coffee was dried for 21 days until a moisture of 10.2% was achieved.
