Savage Coffees

Spectrum

In 2022, we were approached by legendary producer Jamison Savage who offered us coffees for that season’s competition run. Spectrum, a wonderfully tropical & vibrant Gesha, was one of the first few coffees that we roasted at the shop. Having been frozen as green ever since that season, it is with great honor that we are sharing this special coffee as part of our special five year anniversary drop.

Savage Coffees

Jamison Savage produces some of the world’s most renowned coffees, having had several award-winning coffees used at national & world competitions at different stages with unparalleled success. Most recently, Jamison’s coffees were used by the 1st, 2nd, and 3rd place winners in the 2024 World Barista Championship.

Among the multiple estates managed by the Savage Team, Savage Coffees is a Producer Partnership Program that matches coffees from talented local producers with advanced fermentation techniques and methods proprietary to the Savage estate to produce the highest quality coffees.

Spectrum

Coffee is meticulously harvested at peak ripeness and then placed in hermetically sealed, stainless steel tanks for more than 100 hours. CO₂ is injected at regular intervals to establish a controlled and regulated fermentation environment. Both temperature and PH are monitored to regulate fermentation.

Coffee is removed from tanks and slow-dried for up to 20 days on a three tiered raised bed system.

Competition

Spectrum was used in the 2022 season of the U.S. Brewer’s Cup by Amberson Coffee owner & founder Hugo Cano, with which he achieved the second highest cup score in the semi-finals at the National stage.

Hugo brewed this coffee on the Chemex while giving a presentation based on compound chilling . The resulting cup was a vibrant cup bursting with tropical fruits such as pineapple, mango & lychee.
